LEMON RICE
Ingredients:Rice 2 cups Lemon or Lime Juice 2 teaspoons Turmeric ( Haldi) 1/4 tsp Mustard seeds 1/4 tsp Urad Dhal 1tsp Channa Dhal 2 tsp Green chilies 2 chopped Cooking oil 4 tsp Salt to tasteCurry leaves 10 Instructions:1. Cook the rice in a rice cooker or microswave. ( use less than normal quantity of water)2. Heat oil in a fry pan.3. Add the Mustard Seeds and let them crackle.4. Add the Urad Dhal and Channa Dal.5. Ad the ChoppedGreen Chillies.6. Add Curry Leaves.7. Add the Turmeric Powder.8. Add the salt as per taste.9. Add the cooked rice to this and mix well.10. Sprinkle the Lime or Lemon juice on the rice and mix gently.
Enjoy with chutney, dahi and pickle.

PUNJABI WADIAN
Name: Punjabi Wadiyan ( Wadi)
Ingredients:PUNJABI WADI:
500 gm. Urad Dal or black gram dal, skinless 375 gm. petha or ash gourd.
If this is not available, use same amount of cauliflower flowerets or Zuchini , Ginger paste 2 TablespoonsGreen Chillies 10 finely choppedFinely Chopped coriander leaves 1 CupCoarsely Ground black cardamom seeds 1 teaspoonRed Chilly powder 1 tablespoon Black Peper coarsely ground 2 tablespoonsSaunf ( Fennel Seeds) 2 tablespoons20 Cloves - coarsely groundedJeera(Cumin Seeds) 2 tablespoons1 tsp. mace powder 2 pinches of nutmeg, freshly grated 1 teaspoon of asafetida or hing powder 1/2 teaspon of. cinnamon powder Instructions:1. Coarsely grind urad dal in a dry Grinder. 2. Soak in enough water to cover 1/2 inch above the dal and leave for a couple of hours. It will absorb water and become like a thick batter. 3 Add the asafoetida powder in and mix well. 4. Leave overnight in a warm place, to let it rise a little. 5. Clean, wash and gratech the petha or cauliflower and squeeze the water out and keep aside. 6. Grind ginger, green chillies and coriander leaves, all together, in a food processor. 7. Take a big mixing bowl and add the Dal in.8. Add all the other ingredients.9. Beat vigorousl and mix well, add water as needed to fix the consistency to a dropping consistency. 10. Take 2 trays and put the greased paper or baking paper in the tray .11. Now put small blobs the size of Pingpong Balls on the tray.12. Leave them in the hot sun, until dry.
Store in airtight containers or plastic bags. Freezer is good, if you have a large one.
( The more air you have in your mixture the better it is.The trapped air is responsible for making the Wadis light. )
Note: They are not edible straight away and they are used as an ingredient in a curry. You can cook up a dish with Peas and Wadiyan , once you have the Wadis completely dried.Normall one or two Wadis are broken into small pieces and sauted with some oil and then add the spices and peas and cook like a curry.

Butter chicken is prepared by marinating the chicken overnight in a yogurt-spice rub. In Punjab the chicken is cooked in a tandoor.
As it is often the case, a dish like this simply tastes exquisite when it is prepared at home and will definitely ensure that you are creating a mouth-watering dish right from the beginning.
You do not need a tandoor to make butter chicken at home. You can make this in an oven-proof dish .
INGREDIENTS

1 kg chicken - without skin, boned and cut into bite-size cubes or strips 50ml vegetable oil
For the marinade

300g yogurt
1 tablespoon garam masala
2 teaspoons red chili powder
1 tablespoon coriander powder
1 teaspoon cumin powder
1 teaspoon dried fenugreek leaves
Juice from 1 fresh lime Salt and pepper
For the spice mix
6-8 cloves
10-15 black peppercorns
2 bay leaves
1 teaspoon cardamom seeds
1 small cinnamon stick
For the butter sauce
500 ml chicken stock
Handful of almonds,20-25, skinned and pureed to a fine paste 3 onions - finely chopped 2 teaspoon ginger-garlic paste 50g butter 3-4 tablespoons cream Handful coriander leaves, chopped
Method
In a large bowl mix all the ingredients for the marinade and mix to incorporate. Add the chicken pieces and coat well. Cover and refrigerate overnight.
For the spice mix, dry roast all the spices in a small pan. Finely grind in grinder, food processor or using a pestle and morsel. Set aside.
Pre-heat oven to 200 degrees C.
Heat the oil in a non-stick pan and sauté the onions with the ginger-garlic paste until the color takes on a golden color. Add the chicken pieces, reserving the marinade, and pan-fry until the meat turns opaque.
Stir in the dry spice mix to the chicken and mix well, then transfer everything into your Römertopf, roasting tin or ovenproof dish. Cover tightly and bake in the oven for 30-40 minutes until the chicken is tender.
Stir in the reserved marinade and bake for a further 15 minutes. Reduce the heat of the oven to 150 degrees C and finally add the almond paste, butter and cream. Put back into the oven and let simmer for 10 minutes.
Garnish with coriander leaves and serve with fresh rotis, naan or steamed rice.

Butter chicken is prepared by marinating the chicken overnight in a yogurt-spice rub. In Punjab the chicken is cooked in a tandoor.

You do not need a tandoor to make butter chicken at home. You can make this in an oven-proof dish .
